Gluten and Dairy Free Sugar Cookies
2 cups all-purpose gluten free flour (Phillsbury)
1 teaspoon corn starch
¾ teaspoon baking powder
¼ teaspoon salt
½ cup granulated sugar
3 tablespoons confectioners’ sugar
8 tablespoon lactose free butter (Blue Bonnet)
1 teaspoon pure vanilla extract
- Mix all the dry ingredients together. Then add in the butter, egg, and vanilla. Mix thoroughly. If needed add water to give the dough a little more moisture.
- Roll out the dough on confectioners’ sugar. Cut into any shape you would like.
- Bake at 350 degrees for 6-8 minutes. They do not need to be golden brown on the edges to be done. The middle just shouldn’t be saggy.
Sugar Cookie Frosting
10 tablespoons lactose free butter
4 tablespoons lactose free milk
1 teaspoon vanilla
4 ½ cups confectioners’ sugar
food coloring (optional)
- Beat milk, vanilla, and butter together. Slowly add confectioners’ sugar ½ cup at a time. You can add more or less confectioners’ sugar depending on the consistency of the frosting you want!
